The Cake Lady Recipes
Chocolate Cake |

1¾ cups shifted cake flour
1 teaspoon baking powder
½ teaspoon baking soda
1½ cups granulated sugar
½ cup shortening
1 cup milk
1 egg (at room temperature)
2 squares unsweetened bakers chocolate, melted
Place 2/3 cup milk into mixing bowl. Add dry ingredients and shortening. Beat vigorously for 2 minutes. (Start on slow speed so dry ingredients will stay in bowl.)
Add remaining milk, unbeaten egg, melted chocolate. Beat for 2 minutes. Pour into 8" layer round pans (wax paper lined or sprayed with Pam grease) or a 9" x 13" pan (sometimes referred to as a 1/4 sheet pan). Bake at 325º F for 40 minutes or until done.
NOTES:- For a ½ sheet pan (12" x 18" pan), double the recipe.
- To test cake, press toothpick into center of cake. No mix should adhere to toothpick when the cake is done.
